Ha - I wasn't complaining about the "sanitation" so much as just surprised. When you're putting up that much food, I guess I just would have thought there would have been extra emphasis on it, but I'm sure there were plenty of subtleties I'm not appreciating.

Do those hams turn out like the really dry, salty preserved hams you can buy over here, or is it a cure more like a jamon serrano? I did a really country-style version of this once, with a lot less elegant dishes and just a bunch of hicks, but they smoked the hams. I'm curious because I would really like to try doing a jamon-style ham one of these days... errr... years.

I usually have to hit reload to get all the photos to load.

Great photos though. Very interesting process.

About a third of them would load, then I'd hit reload, and some different ones would load while others that worked before wouldn't work. So I was actually able to see them all, it just took some reloading. Great pics though.

Truly incredible. I'd love to spend a few days learning how to properly butcher and preserve a hog. I hope you don't have any problems with customs, it'd be a sin to waste that amazing-looking food.
