Yeah I think I might skip the sweet glaze and go with more acid to cut the ***** goodness a bit -- maybe a vinegar-based Carolina BBQ sauce? Serve with scrambled eggs and fresh biscuits.

The BBQ sauce I made had some tart, but I definitely will try a different sauce next time.

I risked death for rillettes and house made sausage. Outdoors and the nearest other humans were 20ft away.

I’ve made these things before and they are great without any sauce at all, tbh. Just salt, pepper and maybe some onion and garlic powder will give you succulent little morsels of pork belly.
Your post rate is admirable.
