The BBQ sauce I made had some tart, but I definitely will try a different sauce next time.Yeah I think I might skip the sweet glaze and go with more acid to cut the fatty goodness a bit -- maybe a vinegar-based Carolina BBQ sauce? Serve with scrambled eggs and fresh biscuits.

Your post rate is admirable.I’ve made these things before and they are great without any sauce at all, tbh. Just salt, pepper and maybe some onion and garlic powder will give you succulent little morsels of pork belly.
