If you're at a top 10 (or especially top 5) school, and you have stellar grades, pretty much anyone will hire you into the entry level of any industry, regardless of your major. It is assumed you have the raw brainpower and work ethic to cotton to any training necessary.
I suspect the situation is quite different for kids at middle or lower tiered schools. In those cases, yes, I think a lack of hard quant spelled out clearly on your transcript will hurt you.
Good point. Top off your MA with a PhD at a big-name school. For instance, California State University doesn't offer a PhD in English, which causes residents to go to highly-esteemed UC for that. Similarly, if I were going to UTEP or UTA, I'd transfer to UT-Austin for my PhD.
