I've seen it at many butchers and grocery stores, but what exactly is head cheese?
It's a block of meat jelly. It's not a cheese at all. It's meat from the head of a calf or pig or sheep, with seasonings, formed into a block by the natural gelatin in the meat and stock congealing when cooled. Very cool stuff.
