Cows Head Taco

OK, I was out in the middle of nowhere this weekend and I ran across this little Mexican place.

They had a bunch of "authentic" Mexican foods.

On the menu were Cows Head Taco and some others. I had heard about the cows head taco's from one of my friends in Ft. Collins so I ordered one Cows Head, One Pork Maw and One Chorizo.

The Chorizo was dry and not very tasty. The other two were tasteless verging on good. I would try them again since I did not dress them up.

I grabbed a Chorizo Burrito to go and had it for dinner and it was much better than the Chorizo Taco.

They had some other weird stuff on the menu including tripe taco's. Too bad this is in the middle of nowhere because I would like to support them more.

OH well.

Tacos de Cabeza? Sounds awesome.
I've had a couple cow's tongue tacos, and loved them all. Kind of weird, actually. I ordered chili rellenos and a burrito and it was all terrible and disgusting, but the tongue taco was out of this world.

I've heard barbacoa in central mexico is made from beef cheek meat. Maybe thats what it was and it was a poor translation?

I am not sure. I have heard of Cows Head taco's though. I think they boil the whole head?

I think they're usually steamed.
Beef cheek tacos sound awesome though. I've still been on the lookout for some brain. I've seen tacos made out of cow's eyes before, but didn't have the balls to order it.

There's a taco truck that parks on Sunset between Echo Park and Downtown that specialized in cabeza tacos - they're awesome. Brains ("sesos") on the other hand, are gamey and have a chalky texture. I do not dig.

cheek (cachete), brains (sesos), eyes (ojos), are really old school now. they are getting harder to find even in mexico. mostly only old people eat them.

i'm a fan of the eyes.

I like the cheek. The brains remind me of the Old Italians in New York. The Old men would be the only ones to eat the eyes and the brain when they roasted a whole pig.

one of my favorite foods is something called "tuhetanos". i've never seen it in any mexican restaurant in l.a. and if i found one that had it i'd be there every day. it s the leg bone from a cow, split in half, lengthwise. first you eat the meat off the bone, then you scoop out the marrow inside the bone, and hand it to the waiter. he takes it back to the kitchen where it is grilled, then you eat it with chile and lime. i'm drooling just thinking about it.

Lengua (tongue) is amazing. It is practically the only kind of burrito/tacos that I get. Unfortunately, a lot of places aren't offering it anymore because it isn't ordered as much as carnitas, barbacoa, or carne asada. I really can't understand why anyone would ever order carne asada; it is consistently the worst of all the offerings.

I don't really like brains or eyes, and I've had both. I like sweetbreads though. Also the cheek meat is really good, probably second only to the tongue.

I love mondongo. Great soup. I also like deep fried intestines (chunchullo) with a little lemon squeezed on them.

The other week I went by a place that had head cheese sandwiches. I'm kind of disappointed that I didn't try one.

I've seen it at many butchers and grocery stores, but what exactly is head cheese?
