There’s a place in Door county WI that does this type of cider. I believe they call in Normandy style. Could be because of the style of apple though. I think it more interesting and yes, more like a vintners approach.Was at the farmer's market in @Fueco 's turf yesterday and tasted some ciders from this place:

All 4 of these were quite good. Much more of a wine-makers approach to cider, apples+yeast only, no sweeteners or flavoring, texture much closer to sparkling wine than beer.
