I've got around 5, depending on your definition of "Dress Shoe". I think men's shoes should really be thought of more as equipment than as "accessories", and when you factor in the limited range of styles that could be considered sensible it seems to me that there are only so many pairs a man can own before he descends into vulgarity and effeminacy, not to mention redundancy. I put that number at about 10.

My (as of now) rather modest 4 piece collection consists of:
1 Brown Sergio Rossi cap-toe
1 Brown suede Marteganni wingtip
1 Pebble grain Nettleton longwing
1 Black plaza last Alden wingtip

I think all that I need in the near future is a black cap toe, and something appropriate for black tie ensembles.

I aspire to buy a pair of AE Park Avenue in black then Alden Longwings in #8 and after that I'm not really sure.

I agree w/ pocketsquareguy in a way. Through high school and most of college I had one pair of Florsheim black captoes and one pair of LL Bean brown moccasins. They took me through most situations until I got an internship my senior year and had to dress up more often. That year I bought a J Crew chukka. The next year, when I taught jr high, I bought some Sebago bluchers.

Now I have 10 pairs dress shoes. I've bought one or two pairs a year since graduating from college. That was and has remained my standard, since, as someone mentioned, most people buy a pair or two and then wear them out, usually in about a year.

But since I take really good care of my shoes, they last. Around 30 I hit ten pairs. I still buy a pair or two a year, but the number stays at 10 or so, since one or two have worn out and can't be resoled/recrafted, and others I've given to brothers or friends when I've upgraded. The first time I did that was after college when I got a pair of Alden captoes and gave my old Florsheims to a cousin. The year before last I gave the J Crew chukkas to a brother when I got chukkas from Ron Rider. Last year I gave a pair of Sanders slip ons to a brother after I got a pair from Alfred Sargent. Also last year I gave a pair of Frye boots to one brother in anticipation of a pair of boots from Alfred Sargent and loafers and bluchers to another brother in to make room for chukkas from DWFII and loafers from an undetermined source.
