I will check my local Asian market then. I'll be using them to make a coulis.

Well, I decided on the Tramontina and was looking over the instruction on the box. It specifically says under IMPORTANT in big bold letters at the bottom that you should never use non-stick aerosol cooking sprays. Any idea why that would be?

I'd suck it up and buy a Le Creuset. It will last your entire lifetime and many home cooks could use it almost daily.

I have scratching and the inevitable staining on the inside of my LC marmite, and chipping on the inside finish of my Staub cocotte - I'm guessing both will stay that way.

Probably my fault (probably my gf's fault, actually), but I take it pretty easy on my stuff.

+1. I've had some of my pieces for years and have moved several times with them. All are still perfect.

I wouldn't buy a big set or anything, even just a 5.5 quart pot will do for most uses.

do you roast it quite rare and then prepare a sauce from its pressed juices?
