As standard white guy as this may be, my favorites are probably still bun thit nuong and bun cha (in Hanoi though, in Saigon they get bun cha all wrong and basically just serve similar to bun thit nuong...but aside from that and fruit salad style sinh to street vendors up there, Hanoi food blows) and then the Hue trilogy: bun bo Hue, banh beo and nem nuong Honorable mention to the pho joint (Phu Vuong) on Le Van Sy Street and the woman on Nguyen Trai Street who makes the most incredible banh mi thit nuong...

agreed, that's why it's harder to get bun cha in the states, because it's so many southerners, and the northerners do it best. since i won't be up north this trip, i'll avoid it. hey, m@t, i'll send you a pm.

There is no good pho in NYC, just acceptable, or worse.

In Chinatown, Nha Trang is not bad, neither is New Tu Do (102 Bowery). Out in Queens, Thai Son (in Elmhurst) is also decent.

As far as recent good pho experiences, I ate at a place in Philly last week that was great.

I think it might've been Pho Hoa that my cousin and I ate at. He lives about 30 minutes away and we went there after a long bike ride. I had to suck down a xe lua size bowl in 10 minutes because they were closing, but I kept thinking during those 10 minutes that, if this place were to open shop up in NYC, they'd totally destroy the local competition. Then when we drove out afterward, I thought we might get robbed at the red light.

It was great, kinda like Dorchester in the olden days.

Does anyone ever get Pho to go? I have always thought it was a food you had to eat right then.

Have them pack the noodle and the soup/beef stuff separately. That way you can get that same restaurant fresh taste at home.
