russett is not a variety but a characteristic. there are a whole bunch of apple varieties that exhibit some degree of russetting. most of them are out of commercial production and some of them are quite good.

at this point, i want to once again put on my pedant hat and remind once again that buying produce is not like buying sweaters. these are not brands. getting a good apple requires a combination of variety, location, and farming ability. honestly, some of my favorite apples are golden delicious, when they're well grown. and another of my favorites, pink lady, are nearly perfect when well grown and almost totally bland when they're not.
the apples that I picked at the end of October were outrageously good. we ended up with something like 30 pounds (ok, that is way overstated), and used each and every one. Apple sauce, apple crumble, waldorf salad, plain with cheddar, plain with peanut butter, just plain, and the last bunch made awesome apple juice.
BTW- Did you know Honeycrisp was cultivated for 30 years before it was ready for release?
This company makes delicious vinegars.
