I used to refuse any steak that wasn't grey inside, but I had a particularly eye-opening meal involving several rounds of steak (served 'Brazilian'-style) and multiple beers, and now I order my steak medium. I like a nice gradient from grey to pink, with a nice, seared crust

Usually medium rare. I'll go medium sometimes....like for a NY Steak, I think it just does a little better with a bit more cooking.

Medium rare. Used to go rare, but I prefer the center to be at least warm.

I also like mine more done than I used to, though it depends on the cut. Perceptions of rare, med rare etc are so all over the place that they are almost useless, but I like it cooked enough so that the juices start flowing, but not much more than that. I usually order medium rare, but am usually disappointed.
