it's great fish (a buddy of mine "invented" it). but i'd suggest also checking out some of the other single-run salmon that are out there. copper river is the first and one of the best, but other fisheries have caught on. there's a lot of good -- high cost -- salmon available now.

sorry to hear that but DO NOT let that discourage you. Maybe they weren't the best oysters. Fresh, good oysters are amazing!

Eating oysters seems to be a better lifestyle for the dignified aesthete than a dinner for the hungry diner, but I generally don't take to delicacies.

What names should I be looking for?

Depends on where you are and what your fish monger can get. Yukon River is excellent and expensive, a little later run, most goes to the Japanese market. There are others I can't remember their names, but ask at your market and they should be able to get something for you. The cold rivers make for ***** salmon, which produces the best flavor. Copper River may be the best marketing idea ever! FG, your friend is brilliant. Take an early run of salmon and turn it into gold, amazing!

yukon is great. they're ALL expensive. my buddy was a marketing guy turned poet who was working on salmon boats in alaska as a romantic thing to do. he noticed that all the fishermen agreed that the fish out of copper river was the best, but most of it was going to the cannery for various marketing problems -- bad handling, long distance, not much financial incentive to do better. so he got a few fishermen together and convinced them that if they would put in the effort and money to make it a premium product, they could sell it for big money (or more than the $2.50 a pound they were getting then). his big stroke was starting a race for the first copper river salmon to get to seattle, like the first nouveau beaujolais to paris. it's been like 25 years and it still gets headlines. amazing. and because the fishery has been so successful, it's completely turned around the economy of that little corner of the state. he was made an official member of the local tribe, etc (sorry, no casino up there).

ha! his big deal now is reping taylor shellfish (fresh oysters) and frog hollow farms stone fruit. i think he's having more fun doing that.

I went to Handsome twice... really sour coffee on the days I went. Not my thing.
