If you're going all the way to the Oregon, definitely check out Jedidiah Smith State Park (I recommend the Boy Scout Trail over just about any hike in California) and the coast on Del Norte State Park (Hidden Beach is incredible). These are both hikes about two miles out and back with minimal elevation. You could do both in a day, or do one on the way up and one on the way back. Amazing area.

edit: no great hotel recommendations in the area, as we were camping most of the time and it's mostly motels, but I enjoyed the morning view in Gold Beach, OR. It's right on the border. If you like car camping there are excellent sites in many of the parks up there.

If you like to drive and see different parts of the country, you could take the 101 all the way up to Coos Bay, cut inland to I5 through Grants Pass, then cut back via the 199 through the Smith National Recreation Area. That would be a hell of a trip.
