i haven't cooked from it, but just looking through it, it seemed the spanish stuff was the best to aim for. lots of stuff like spaghetti bolognese. and hamburgers. they eat simply, those kitchen slaves (er, stages).


The Caesar salad is great. Probably the best I've had. Almost classic but with sherry vinegar instead of lemon. I will admit I loved the potato salad with franks. The curry beef was an awful recipe.

Tsuji's book is really awesome. Every bit the equal of Julia Child's great book, or Escoffier, or whatever. Cannot recommend highly enough. There are a ton of things you can put together in ten minutes, and enough things to keep you challenged if you get really interested.

Took a quick look at the Tsuji book online--I'll probably order it on Amazon soon. But I did find one thing that raised an eyebrow. When he talks about fresh ingredients in his preface, he encourages readers to prepare sashimi from fish caught in local waters--including freshwater fish. I have actually eaten raw fish that I've caught (including rainbow trout from the Kern River in California), but probably wouldn't do so again given the facts about parasites and such. Or maybe my love of raw fish would overpower my fear of getting sick--not sure since I haven't been fishing in a long time.

It can. We made an apple cheddar soup from their cookbook when we got it. It was hot as hell. Also gross.

In my opinion the recipe on pg 103 is one of the best anywhere. I use tai. Just cook the fish until it is barely warm inside. Stick a safety pin in and then stick it on your lip to check. It's really awesome, easy and impressive. You could make for 6-8 no problem.

That one sounds great. Also excited to try those stupid little tomato cylinders and the pigeon recipe.

I enjoyed my meal at Bras so I think I'll sometime buy the book, too. Unfortunately it's quite expensive... How much did you pay?

I mix and match. Some bowls/plates are those, some are plain, some have subtle stripes across the diameter. None have an awkward geometric pattern or any color.
