I'm a Shanghainese. So my suggestion is the trip BeiJing → Shanghai →HK.
Reason is simple. In Beijing and Shanghai, you just need to use your eyes to see, use your mouth to eat, use your ears to hear.Tripadviser will guide you to the good and famous and trusted restaurants, seesights, etc. If you go to the SanLiTun Ya Xiu Clothes Market in Beijing, don't forget tailoring a suit of Tang Suit. I think it must be a best souvenir for this China tour.
And last, you will get to HK, and then, you can pull the trigger now. whatever Uniqlo, Muji or any other things, all of them in HK are cheaper than them in mainland. Of cause, you may aim these things: watches, diamonds, jewelries, luxury brands clothes and shoes, good tailors also.

I see your point of course, but one goes there more for the ambiance. I don't know of any Chinese restaurants that are in temples that date back to the Yuan Dynasty. One does get a bit tired of the local faire after a while. Of course, for duck, I would recommend if you want something quite impressive:

Gui Gong Fu, Da Fang Yuan No 11
Off Da Fang Jia Hutong, East of Chao Yang Men Nan Xiao Jie

朝阳门南小街东,大方家 胡同北边,芳嘉园十一号
桂公府

For something more humble, there is Li Qun 利群烤鸭店.
