On shirt sleeve length, I always have mine long enough to hit the webbing of my thumb when totally unbottoned. I hate exposing my wrist when shaking hands, talking on the phone, etc.

This is fine so long as you also follow the other traditional principle: the cuff should be tight enough that when fastened you can’t easily remove the shirt.
That will prevent it from extending too far past the jacket sleeve.
