In Texas you can do your own contracting and my father does it himself for anything he builds. Then again, he is an engineer with three decades of experience managing construction of massive energy plants. The biggest problem will be getting the subcontractors to show up on time. Add about 30% to the time lines to account for this, maybe more if you are out in the sticks. The plus side to rural construction is that codes and inspections tend to be lax - excepting the tax assessor.
