Cheese for me. It is pure. When I was in Torino I ate at Spaca Napoli frequently and found the sprinkled salt on the bottom of the crust just before inserting it in the oven which was divine.

When I'm at home, I make a nice smoked mozz, red onion and caper pizza with fresh oregano added when taken out of the oven.

I've been to a lot of the more well-known pizza places around here lately, so far I would rank them as follows:

top tier:
Ideale, SF
Delfina, SF

middle tier, still very good:
Chez Panisse, Berkeley
Tommasso's, SF
A16, SF
Di Fara, Brooklyn
Cheeseboard, Berkeley, CA
Grimaldi's, Brooklyn

lower tier, still good (I would buy again):
Lombardi's, NY
Pizza Rustica, Oakland

Also, I am a big fan of 10-lb deep dish chicago style as well, there are times when I would prefer a 1lb slice of that over any of the above. Zachary's and Patxi's are great here, I haven't yet tried Little Star.

I would never limit myself to one type of pizza or one pizza joint. There is good pizza to be had all over the place around here and I like to try different things all the time.

Ideale is in North Beach, some people say it's the only decent Italian place in that neighborhood. They don't specialize in being too trendy like A16 but their pizza was a+ solid. http://idealerestaurant.com/index2.htm Look at that little pic of pizza on the menu page. You can tell it's good. I forgot a couple of others I have tried and are well-known, Chez Panisse and Tomasso's. I update the original post.
