The guy has a lot of years on either. I don't find it all that surprising. Restauranteurs often appreciate people who really like their food.

I adore figs. I'd eat them every day if I could. They taste great in a salad.

It's nicely glazed though the sauce looks very pale. Can't tell taste by sight, of course.

not sure what those red thingies are.

Yes, this would have been the right thing to do. They tasted great (they were soaked in brandy) but the texture wasn't as pleasing as it would have been as a purée. I just wanted to sit down and eat. That goat braised for over 3 hours.
