Oh I see, I call that one Blue Ribbon. Good stuff - but I prefer Bakery and Sushi

Bill Telepan is a big proponent of the greenmarket, I would put him in the same camp as Barber/Frazier/Hoffman. Actually, there are quite a few similarities between Telepan and Dovetail with the former being a bit more expensive and serious food-wise.

The biggest difference between the two, in my experience, has been the service. It is consistently much better at Dovetail. I enjoy Telepan and go there a few times a year, but I have had more than one frustrating experience due to poor service. Never had a problem at Dovetail.

The most interesting new place on the UWS is Lincoln but I haven't tried it. Here is the review.

If this is UWS, then so is lunch at Jean George and the rest of the wonderful Columbus Circle options (A Voce, Masa, Per Se, Marea, etc.)

OP was looking for smaller quieter places, not the big names.

Favourite place for breakfast is called Doma Cafe & Gallery, located 17 Perry Street

For dinner I really enjoyed Momofuku Ssäm Bar and Colicchio & Sons

Brooklyn diner if you are looking for traditional fare, although on the higher end. I like the fried polenta they serve instead of home fries.
