I was thinking Grocery Bistro, The Bristol, and places like that. GB is definitely a cook's hangout. It would be cool to eat there. But now that I think about it, I don't want to stay in Chicago for a night. It seemed a good idea at the time, but now that It hink it might be the last time I see my family and my girlfriend for 6 months, I will probably just do a stage in Indy.

I have nothing to add, other than that I love the concept of "staging". Wish it were an accepted practice in other professions, too.

Shoemakers and tailoring, no? It also happens quite a bit in the performance arts, and according to the movies, martial arts.

There are lots of professions which could use quite a bit more of it, though.
