Which is more satisfying for you in the bespoke process?

I am very satisfied with the final product -- no disappointment at all, quite the contrary... I am finding that I just really enjoy the process.

The whole process of creating new clothes and then wearing them is equally important.

I am with you on those elements, but would have assumed you would want to, at least, specify the number of jacket and sleeve buttons and certain other elements (belt loops come to mind).

I think I actually enjoy the chat and bonding with the tailor himself most of all. But, of the options listed by the OP, I'd say probably B is highest on my list.
