we had the charcuterie platter, the pate de campagne, the laitue salad, and the brandade, and then got mains:

Bouchon is definitely one of the better meals I've had in awhile, and I just had the Ducasse and Robuchon version bistro meals a month ago. La Table Robuchon was very fine and purposeful; Bouchon was big in flavor and seemed fitting, given this is America. Nice place, I will go again.

How did you cook that fish?

I don't like how there is no sear or anything. I need some form of browning or crust on my fish.

these are some seriously tasty looking dishes, but i swear, i'd go hungry again within 3 hours after eating them. the portions are so small!

Richard, I poached it gently in the sauce, atop the vegetables. I prefer cooking sole like this; much more delicate and flavorful, in my opinion.
