I still think Piedmontese Nebbiolo will the best pairing for the dish. Pick one of the '04s or the '03 if you're feeling ballerish.

I have had 3-4 of those '07 VT and while I'm certain they will get better, they are VERY yummy right now. I still have a case sleeping away in my locker. I wouldn't be afraid to drink it now, your only risk is that you'll be disappointed that you didn't save it for a special occasion.

I have a case of the VT and haven't yet tried it. I know people who have and they agree -- it is delicious now.

I  Rhones, and I love VT.

Last night had an '08 Mollydooker Verdhelo. I really enjoy that grape, and that wine is probably my favorite non-reisling $20 white.

If you want a great cdp in a similar style for half the price try la roquette. It is made by the same people and is very accessible young. I had a bottle of the 07 on Wednesday and it was fantastic.

I haven't had one that wasn't delicious, though some have been frighteningly big.

yes, a handful actually. Not bad as in poorly made, but bad in style and full of fruit but lacking structure. I much prefer the wines from the 2004 vintage, 2007's (CdP in particular) are too ripe for me. Would not purchase.

It's all good. I guess I've just been lucky. All the '07 CdR's that I've had were powerful, but balanced and had subtlety as well. Then again I haven't had any CdP.

So pairing the 07 VT should work?

Every one I've had has been wonderful, except that I wasn't that crazy about the 2007 Pallieres Gigondas that I had.

Parker gave it 94 points though, so you can decide who has the more influential palate, me or RP. I've got one sleeping for a few years, so perhaps I'll try it again in a few years.

I've never been hot on the '07 Rhones. Nor Rhone in general aside from a handful of exceptions.

Thanks, matt. I like second estates as a rule.

Really? Probably my favorite red (that is, CdP). What is your red of choice? ~ H

really, just personal preference. If more Rhones were made like Gentaz-Dervieux, it would be a different story. I like a lot of CdR, especially for the price. My reds of choice are from Piedmont (the big B's plus the non-nebbiolos), and I love Burgundy and a good Bordeaux.
