What temp do you all think I should set the sous vide for the filets tonight? I sliced them myself at 2.5" thick and Imma finish per usual on the IR burner. I'm thinking 120, sear, and tent/rest for 10 minutes?

FYI Thermoworks has a good Black Friday sale, including their new Signals BBQ thermometer and Billows pit fan controller. And probably the best sale I've seen on the Thermapen (25%).

I wish I didn't already have the Smoke. I'd probably pick up the Signals & Billows.

Btw, this is the best thing ever. Using it right now and will have pics soon.

So my only disappointment is I lost my grill marks when I let the steak come to temp on the griddle. That was always the plan but I’m thinking of doing sous vide to about 90 and then grill finishing. Either that or thinner steaks as these were some thick meat (TWSS!)
