given my wife’s vegetarian experiments of late I figured it would be best to compensate. 850 grams of pure delicious joy, at least for me. The other one at the side of the picture was shared by two others at the table?

Got the ceramic "beer can" piece from KJ. Injected with melted butter, hunk of hickory on the coals for a little smoke. Will side it with stuffing that includes the homemade Italian sausage I ground and made this morning.

Wagyu boneless short rib marinated in chimichurri. Basically spicy beef bacon.

Decided not to do happy hour after our errands so pulled some prime ribeyes out of the freezer. Sous vide up to 105F then onto a 500 degree KJ griddle. Yup, this is good.

As the steaks were soaking I took two potatos, sliced, and sliced up an onion. Assembled potato/onion/potato, etc. Garlic powder, butter, wrapped in foil and on the KJ with wood smoke for 1.5 hours.

Damn good meal. Check wine thread now.

Negative. I did let one side get more crusted than the other though which explains the larger grey zone.
