Early stage of this recipe from Serious Eats. Came out great, kids scoffed the lot. I left out the sugar and didn't feel the lack.

Great dish... havent tried SE recipe though.
Don't think it deviates too far from tradition?

Next time I will brown the chicken more aggressively and use a little less garlic.

Not sure there is a “traditional” here. Traditional is likely how your mom or grandma made it. Mine is similar to this one but no sugar. I also add large cubes of potato which are my favorite part.

Can see that being good!

I did roughly mashed potatoes, skin on, on the side. Feels kind of a rustic dish?

Did not grab a pic but birria de res quesatacos for dinner last night. Highly recommend giving birria a try. After you blend the chilies do run through a sieve on the way back into the pot. I made two trial tacos, one corn, one flour. Flour is my default and we get them from a family owned Mexican bakery. Paper thin with a good bite to them, just perfect, but corn definitely works with this flavour profile better.

It is Beef Wellington in the making. All that is left will be to wrap it the same way in pastry then cook.
