I find that less fresh beans take better to finer grinds. Makes sense when you think about the surface area and suchI feel like I get a lot more use out of the beans with the finer grind. The stuff I made with the coarser grind tasted fine but too weak when diluted. Also, I made my last batch with french roast beans and thought it was the best batch yet.
