I had some duck at Little Owl in nyc. I was not that impressed, mostly because it was cold-ish. I'd love some nice Peking Duck.

Is there any use for duck in place of a ham hock? I want to make a lot of soup/stews over the next month.

I've never had a sufficient quantity of duck to use like that. But, I bet lots of duck carcasses could make a pretty interesting stock.

Hong Kong syle Peking Duck is served in three courses. The first is the duck skin as traditional Peking Duck. The second is duck meat stir fried. The third is duck soup made from the carcass. My favorite way to eat the dish.

Chinese Cafe Eight used to have a whole Peking Duck for 2,880 yen. (which at the time was around $20-25. I assume the price has gone up since then, and the exchange isn't very good right now. Oh, and they are open 24 hours a day. They have hundreds of menu items. Most of which are pretty damn cheap.

I somehow got talked into buying two ducks today. They're beautiful, organic, and should taste great. I think I'll take one of them and turn it into peking duck. Someone pm me with a recipe immediately!

It's a PitA, as I recall. You have to steam the thing for a long, long time to render the fat out, and I do mean all of it. This is not like a froggy duck dish, where a little bit of fat left in there is OK. The skin has to be like a potato chip.

The resident Azn, the old prep guy at work, said it has to be tented and steamed forEVER. He said we're talkin like 3 or 4 days of steaming. Yikes.
