It's usually used as a base flavor for stews and sauces, AFAIK. I would think it'd be hella nasty to do anything like reconstituting it. Although I bet with some kombu and bonito flakes you could make a killer scallop dashi.

Another very nice dinner. Chorizo, squab, branzino, asparagus, eggs, foie gras, lentils, clams... not necessarily in that order.

Is there another name for branzino? NM, Just googled. Branzino - European seabass

catching up on the last week:

last monday - sushi for breakfast at the tokyo fish market, ramen for lunch (miso based) and dinner (pork based)

Wed- hong kong - peking duck and a nice solid chinese meal based around duck

Spend the weekend in Singapore, eating mostly street food. pretty good dim sum for lunch on saturday. also, clay pot rice, white pepper crab, chicken rice, roast pork and red pork, soup dumplings, wan ton noodles with pork, carrot cake, ah bawling

today, Delhi, indian veg lunch, including veg biryani and black dhal. dinner was indian chinese, including chili potatos, salt and pepper corn, crispy lamb. for dessert, kulfi at a street stand.

no, my distributor there is a serious foodie, *********** in his 50's. most importantly, he has realized that I don't really enjoy stuff like shark fin and birds next. anyway, he always takes me to these places that are fantastic - not exatly holes in the wall, they still go for maybe 50 bucks US per person a meal, but they are the type of places that hong kong chinese business people go to for celebratory meals, not the houte cuisine places. haven't been dissapointed yet.
