Assuming a nice competent, clean slice, how much wine do you lose? In all the videos I've seen it seems like fair bit. Once things settle down is the amount negligible, or is it just the price you pay?
Most of the time nothing at all to insignificant amount, just like @esoxm said. No need to sweat it, I don't mind slicing a Krug or whatever. Believe the major issue is people, not being a sword swinging maniac like myself, doing it once per year at new years eve or something. Bottle not being chilled enough and ignoring follow the seam etc. They crack the bottle where the neck ends, towards down body on the bottle

You do not "slice" which is a common misperception. You slide the blade along the seam of the bottle giving the lip of the opening a good whack. Hold the bottle such that extending your arm will end with the blade past the bottle. Quickly, with the blade firmly in contact with the bottle, extend your elbow sliding the blade along the same to "whack" that lip and continue on.
Right, some people believe you cut the bottle or even a direct hit on the cork. You need to be a bloody ninja to do that

It must be the saberer then. These are not self-help videos but rather people filming waiter/sommelier doing a presentation & opening for a group at a restaurant or event - likely not very skilled or experienced.
