Pretty happy with the crust and didn't grey out a lot of meat (TWSS!).

SRF wagyu NY Strip. Sous vide to 130, on inferno grill, rest and slice. Saltbae eat your heart out.

Looks amazing, the charred crust must be delicious.

Meanwhile, I decided to have a week off from eating steak - worst decision this year so far.

Anyone ever do a strip loin as a roast?

Thinking that will be christmas dinner… just trying to figure out if I can find a source with a ton of age on it… my local butcher only does the standard 35… suppose I could ask for him to age one longer but wondering what other options are out there.
