Shirt with french cuff + Jeans ?

I think it would look like you didn't have a clean button cuff shirt to wear.

Basically, no.
French cuffs tend to look out of place if you are not wearing a tie. It just looks "unbalanced". And most men (I am talking about grown-up men, not college guys) would not wear a tie with jeans. So, I would say, assuming that you are an adult: safe your French cuffs for the occasions when you are wearing suit and tie or, at least, sport-coat and tie. (And I hope that you are not one of these unfortunate guys who are expected to show up in casual clothing at work.)

I've moved beyond this look, but when I did do it, I had several silk knots to fasten the cuffs. I can't imagine metal cufflinks with such a casual look.

Actually, I am expected to dress casually at work, and I'm not embarrased to say so. I gladly stretch the 'rules' to suit my whims based on how I feel on a given day. There is an upper limit to my whims, but I personally don't regard french cuffs as being that big a step up in formality over barrel cuffs, provided you don't fasten them with anything 'dressy'.
