Japanese button-down shirts - quite different!

I just watched "Jiro dreams of sushi" and I could not take my eyes of Jiro Ono's simple button down:

The collar is deceptively simple but lovely. Check out that roll.

How can I find something like this in the states? Or if it doesn't exist, what should I ask the tailor for?

I've never seen a shirt like that before, so I don't know exactly how it's constructed, but it looks like it might be a kind of self collar.

The top button is positioned a bit lower than where it would be on a regular collared shirt and the fabric looks like it's cut a little higher at the front. I don't think there is a stand there. It looks more like a two-piece collar that then folds down over itself.

Paul Stuart makes the "Cooper" collar which has no stand. But it's not a button down and the collar doesn't stand up like that.

G. Inglese, a small shirtmaker based in Ginosa in southern Italy, make shirts with one-piece collars, too.

The collars are wonderfully light, with a great roll, and they make a great summer shirt.
