I just made banana French toast

It's just like normal French toast but instead of vanilla extract I used banana.

i do 1 smashed banana, 2 eggs, 1 tspn vanilla extract, 1 tsp cinnamon, 1/2 cup half & half. let is sit in fridge and thicken for 2 hrs before dipping.

How much do you smash the banana? It seems like it wouldn't mix in well in batter.

i pulverize it with a potato masher, into a paste-like consistency

That kinda ***** up the custard, no?

I could put the bananas on top, but I have a feeling all that starch would make banana bread before toast (or Bananas Foster).

Dehydrated banana chips ground up into a fine powder might be interesting to use in small amounts.

no, the time is short enough and the ratio small enough that it's okay. try it, you'll like it.
