Have to give my first this coming Friday - not sure what/how to put? Hand deliver? Email? *clueless

When you sit down with your boss, just say you have accepted another opportunity at blah blah doing blah blah. You regret the tough spot you're putting the team in but you are excited at the opportunity as it allows you to blah and balh with your career. You are happy to help in anyway in the transition, interviewing a new candidate over the coming weeks. *Then ask how he would like to inform the rest of the staff. If you meet regularly, do it at a staff meeting. If not, send around an email saying essentially what you told your boss.
In person. Prepare a very short professional letter and hand it to him when you walk in. Beyond that, Joffrey's advice is spot on.
Walk into your boss' office, climb up on his desk, and present him with a fresh Cleveland Steamer.
That's what I daydream about doing, anyway.

Pretty much just saying that I have taken another position and when my last day will be? Literally a 2 sentence letter? Should I deliver one to HR as well? I assume so.

Just tell your boss. Who in HR would you contact? When you discuss it with your boss, ask him next steps to notify appropriate parties. He will tell you he will notify staff, or offer you to do it yourself. Ask him about exit procedures with HR, etc.
