just so you know, pio is funning about the pickles. pickles are by definition brined, and therefore not 'fresh'. fresh would be cucumbers. 'new' pickles out of the barrel are a treat, but they are still not 'fresh'.

You can also get them at the fish shop at the Ferry Building. My favorite way to eat them is right out of the shell, but warmed under the broiler for a few seconds on toast. I think it improves the flavor and texture.

The insides are pretty creepy looking. Personally, I think most uni at sushi restaurants tastes a little adulterated. Fresh is pretty strong, like iodine mixed with chocolate.

interesting description ... i can see it. the chocolate is more the texture, to me. like nearly melted ... we get great uni down here because of the kelp beds off the channel islands. i visited a producer in oxnard whose uni is sold at tsukiji ... he gets the second highest prices after hokkaido. i learned from him that the appropriate color for uni is pumpkin ...a lot of times it'll be more khaki ... not good. or even dark brown... really not good.

It's hard to find, but fresh soy milk at the farm, still warm, right out of the soy cow, is fantastic.
