Hmm. That must be it. I figured they did something to keep it fresh, and to shorten the time necessary to get the things really clean. FWIW, and I am sure you have done this, put any not beautiful gonads through a tamis and into some homemade mayo, and use it with shrimp or crab to make salad.

haven't done that, but it sounds great. usually i just serve them on grilled bread with a little lemon juice. great summer app. another thing i've done (ripping off michel richard), was freeze calamari steaks until they were quite firm, then slice very, very thin. Saute very briefly in hot butter and finish with uni, which melts into it. little parsley and bang ... it's like the very best seafood pasta (calamari being the noodle).

have to disagree. to me, buddha's hand (while it has a really cool name), is not as good for that as other citrons, which i find more fragrant.
