I'm thinking of splurging on case of 2005 Pavie. Thoughts compared to other Bordeaux? It seems fantastic for the price, and I am curious how it will hold up for 15-20 years.

A stellar choice. For the going price, one of the secrets of the 2005 vintage. I envy your option.

It is a great wine, but made in a fairly "unique" style. Do you have much experience with Pavie or the other Perse wines? If not, I'd suggest that you buy a bottle of the 2005 (or other vintage post 1998) and see how you like it before dropping the major coin on a case.
