Any good salmon recipies out there??

Grill it on a cedar plank.

Get a cedar plank (not from a building store, but from the bar-b-q section of a food store) and soak it in water.

coat the salmon lightly with olive oil, then rub it with a mixture of: couple tablespoons of real maple syrup, a dash of chili powder, a teaspoon of soy sauce, and some pepper.

Place the salmon on the soaked plank and put it on the grill. Turn it over once while grilling.

Eat it, and be happy.

I used to use a sherry/mustard/honey marinade, but now I'm of the opinion that with salmon, less is more, so here's all I do now:

Sprinkle with Herbamare seasoning. Broil for 5 minutes. Turn. Broil for 3 minutes. Done.

Obviously, adjust times to taste.

1 part balsamic vinegar to 10-or-so parts decent olive oil and sprinkle in a little garlic and parsley. Marinade the salmon in it and put some fresh raw veggies (peppers and cucumbers work well) and fruit (lemons and orange, sliced into thin circles (remove the skin)) on top. Wrap it all up in wax paper and then in tin foil. Cook it on the grill or oven or whatever. It tastes pretty good, but it looks amazing: lots of color.

Protein plus healthy fat make salmon the ideal food for hard, lean bodies.

Serves: Prep Time: 10 minutes Cook Time: 5-10 minutes

Ingredients

1 tsp. garlic powder
1/4 tsp. salt
1 tsp. black pepper
1 lb. salmon steaks or fillets
1 Tbsp. extra virgin olive oil
1/4 cup lime juice
1/4 cup fresh cilantro
1 tsp. Splenda or other sugar substitute

Directions

Sprinkle garlic powder, salt and pepper on top of salmon steaks or fillets. In a small glass, mix olive oil, lime juice, cilantro and Splenda. Place salmon in a nonstick skillet over medium-high heat and cook 4-5 minutes. Turn, cover with cilantro mixture and cook another 4-5 minutes. Makes three servings. -- By Laura Creavalle

One quick and easy recipe, can be done with a BBQ or pan:

Pan:

Mix 3 oz teriyaki marinade, 1 tbsp sugar, 1/2 tsp salt, 1 oz Jack Daniels, and 1 tbsp corn starch.

Spoon this entire mixture onto the salmon until it is completely coated. Let it sit for about 10 minutes.

Heat up a non-stick saute pan at high heat for about 3-4 minutes, then drop in the fish. Let the salmon cook in the skillet until it is about 1/2 translucent, then turn the heat to a bit above medium. Once the fish is about 2/3 translucent, flip it over, and cook for about 2-3 more minutes, then it should be perfect.

You can do the same thing with a BBQ but it will cook quite a bit faster than on a pan.

I'm with Kai on this one. My wife makes a salmon/cutthroat, etc. with a sauce that utilized plenty of maple syrup. As it's cooking the water in the syrup evaporates to some extent, so you're left with an incredible caramelly/smoky maple flavor.
