Where should I buy my first high-MTM or bespoke suit?

That's great, but in my experience it's just more fun to do it in person and if one is struggling with the huge amount of choices you have, being in a real store is great. When I commissioned my first pair of trousers, my tailor was able to bring me some pairs I could try one that featured whatever I was thinking about. I couldn't have done that online. I recently commissioned some shirts with T&A at one of their trunk shows and that feeling of being pampered and being the center of attention, in addition to the copious amounts of complementary drinks, was amazing and could not have been done online.
I am not saying you can't have a good experience online or should never do it online, but OP is popping his cherry and I believe that should be something special, not a glorified Zoom call
Would caution that the experience may also be wildly different depending which tailor he decides to work with.

Obviously everyone has their own preferences but I prefer to work with independents which often means a more normal hotel room than a large suite, usually not 5 stars, a shared workspace or basement workshop, I’ve been measured in a garden sitting on plastic patio furniture, etc.

I’ve also seen pretty lousy MTM passing itself as bespoke where they’ll make you the center of attention and hand out all the drinks you want. The window dressing isn’t all important to the experience or the end result.

I'll give you that, not everything that glitters is gold. But when you work with established and reputable brands or tailors, the risk of being tricked into paying absurdly high prices for an inferior product is pretty low and, while I haven't worked with an independent tailor myself, I'm guessing it can be just as fun, if in a different way.

I would stay away from remote programs, at least for the first bespoke suit. It's much more fun in person, the tailor will be able to better see areas that might require additional attention and they'll be able to show you let's say the difference between two and three buttons on real jackets you can touch and feel.
I‘ve never looked at a visit to the tailor as “fun”. Closer to a visit to the dentist .😏

If you're near New York, Solito is a great option. I'm having him do a jacket for me next month.

Strange comparison to me. The process of getting measured, picking fabrics, and project details should be fun. It doesn't have to be in a 5 star suite, with Champaign, but I would hope it is more enjoyable than going to the dentist. To be fair though, I don't hate going to my dentist, but that's a separate conversation.

Late to the party but oh man I love Sinfonia’s style, I haven’t been able to find many places with florentine house style and I think it’s my favorite. Armoury model 15 is great but they don’t have a ton in that cut and MTM gets pricey quickly. If you know anyone else doing similar styling I’d appreciate it (I’m an hour and a half outside NYC so bonus if it’s in that area).
For MTM (it's a remote bespoke program with virtual fittings) I recommend Sartoria Pastena. They are sub $2,000 USD. I hear great things about Sinfonia's (out of Taiwan. House style is Florentine) remote bespoke program. Lastly, I recommend Adriana Esposito from Naples. How recent are those prices for Saman Amel?

East Coast? Check out the Andover Shop. They do a lot of MTM more
of less at your price point. I recently got a jacket from them that
worked out well. Their origins are very Ivy but they are by no means
locked into sack suits.
