Traditional shoemaking.

Following another thread that discussed the merits of manufacturing methods used in RTW shoes.There was much talked about traditional methods that are used in bespoke shoemaking.
Would anyone like to point out the crucial methods and traditions that we should understand if wewish to understand what is really important in good shoes , be they bespoke or RTW.

from my brief foray into bespoke shoemaking, one thing I've learned is that visible stitching on the sole is both cheap, and stupid, and is a consequence of 1) poor shoemaker or 2) using machines. a stitching channel should be cut and the stitching should be covered.
