What colour and type of shirts do you guys tend to go for at night time (pub, dinner with jacket), and what kind of things should I do to my suit and tie combo to make it less business and more dressy?  ie white shirt?

I'd get OCBD button downs.

Not sure if this is flagrantly incorrect, but has anyone had success with those online MTM suit places? I'm thinking of taking the plunge by seeing if they can handle a simple white shirt first, kind of like Giotto's circle test. :p

The suit itself will be an experiment of sorts to try a particular set of details i have in mind.

Getting a shirt right is nowhere near to getting a suit right, with every new MTM suit provider I took, and they both in Sydney, the first 2 suits required a quite a few alternations, which they covered.

I would not recommend do an online order unless they will cover for alterations, and that is a tricky matter.

I know those two things aren't comparable, i just wanted to work in an art history joke (and i DO need a couple of new white shirts...). I've seen that a few places have pretty comprehensive alteration/return policies, you'd have to be completely daft to pay for an online suit without that assurance!

Sparing that, where do Brisbane-based folk go for their MTM?

My biased opinion is that you require an experienced fitter to do your measurements properly. The brisbane guys can refer you to someone trustworthy.

Its simply not possible to ask a friend to take your chest and waist measurements, type them in online and expect a good fitting suit. Even if alterations are free, unless they are minor there are many areas where you will throw the balance or not be fitted correctly that cannot be fixed

Is an OCBD button down like an ATM machine? Or a PIN number? :p

Cheers all.
Yes I think a few nice whites are in order for night time. Something like a plain classic white and an OCBD white, to complement my increasing light blue range (light blue suits my complexion more)...
