Most mornings I eat two soft boiled eggs. I most often add a slice or two of prociutto and every now and then a slice of whole wheat toasted bread. I top the eggs with a dash of salt and fresh corse ground pepper. Along with a nice hot latte, this is the perfect breakfast. (My wife bought me a little plug-in egg soft boiler that chirps when ready. I have a perfectly cooked egg every time).

I used to eat more cereal and yogurt, but found I was hungry and snaking at 10:30 or 11am. I met with a nutritionist and after evaluating my diet she recommended more protein and specificly eggs for breakfast. I then went over to chef Alice Waters Cafe Fanny in Berkeley for breakfast. That was the first time I had been served prociutto with eggs. They are now always in my refrigerator.

I recently bought some Eggland Best organic brown egg, supposedly from free range chicken too. They literally cost three times more than plain old white eggs.

Can you really taste a difference or is it just in your mind?

Probably 1.5 times the cost b/c it's Eggland's Best, and another 1.5 because they slapped the words "free range" on there.

well, my omelet did taste better and I was happier. but it may have been from the Dashi that I added.

But, seriously, fresh eggs--and I'm talking about just-laid-last-night eggs--do taste better, IME.

There is a difference in taste between the eggs that I can get from my local farmer's market and those from a supermarket.

I also use to throughly scramble a egg and mix in some chicken stock in a cup and microwave. I get this jello-like thing that taste pretty good. I think it's some sort of Japanese dish or soemthing

Sounds like you were attempting a chawanmushi (sp.). Another fine egg dish.
