hemming jeans is probably one of the simplest things a tailor could possibly do. take into account that APCs only need a normal hem and not the european style hem where the original hem is reattached, you should be able to send it to any tailor / dry cleaners any they should be able to do a good job.
Is there a reason on not keeping the original hem? I have a paid of APC new standards that need to be hemmed. I've never had to get jeans hemmed before, so do I just tell the tailor to hem it to a certain length (31" for me)?
