Halibut. Everytime I want to cook with it though I have trouble finding it.
i've always had trouble cooking halibut. seems to dry out really fast. i did have some luck steep-poaching it -- put it in a bowl and pour hot liquid over, let it sit until done. also nice cooked en papillote ... as long as you get a thin piece so it cooks quickly.
^Dory/roughy is also a fav though it's become very scarce and $$$ in the midwest the last few years... along with most other species for that matter...
Coastal Seafoods gets Dory occasionally.
