Yeah, I don't really do much with it other than caipirhinas, either. Smells too strongly of fresh corn silk to me (only de-tasselers will know this scent).
But based on similarity, I would bet, ed, that you could safely use it in any drink that calls for a Rhum Agricole -- the light, cane-based rum of Martinique (I think its Martinique, anyway). Rum drinks with Falernum or Orgeat would also be good candidates, but we're getting obscure now....

Had a cocktail last night that satisfied two questions--what to do with cachaca and what to do with St. Germain.
Called, IIRC, a Gaton...
1 Oz gin,
1 oz st germain
1/2 oz cachaca
1/2 oz lemon juice
2 dashes Reagan's Orange bitters (only have Fee's orange)
shake, strain.
Very good but I thought needed a little more complexity. Maybe next time have a dash of peach bitters or more chacaca/less st germain

Wow. I found my Falernum was a success. Have not tried orgeat though; will likely just order Fee's. I think I used the zest of 8 limes, 40 cloves, two star anise pods, a drop or two almond extract, W&N overproof rum, and lots of simple. Two ounces good rum, bitter, a dash Cointreau, and half an ounce Falernum makes a Rum Old-Fashioned to die for. ~ H
