Foods You Never Find Fresh

So, I was thinking about how I never see chickpeas in their fresh state. I've seen them canned or dried, but never have seen a pile of chickpea pods at a market, ready to be taken home and shelled.

I was wondering what else is out there that is never, or very rarely, bought in its fresh state.

In before beef jerky.

Pickles. WTF? I can never get them fresh and can only find them bottled.

You're going to the wrong places then. Fresh pickles straight from the pickle barrel are delicious.

Olives straight from the tree are not really edible (bitter). They need to be processed first.
