I voted for tripe due to its relative ubiquity.

If I got them already cleaned, I'd probably do a spicy Asian style intestine or do chitlins. Since I'm getting them straight from the farmer, I don't know if I'm going to have to go through the whole boiling and bleaching process or not.

Deep fried intestine rings are a pretty tasty appetizer. Serve with lemon wedges.

Not in my experience. Full disclosure is that I've never prepared them, only eaten them in restaurants. Perhaps there is more to the preparation than I know.
